It evaluates their performance through a panel recognized by the ‘Ministry of Agriculture, Food Sovereignty, and Forests’ specialized in certifying high-quality oils. Participants in the competition can rely on the analysis of a laboratory accredited by the International Olive Council (IOC), which objectively verifies the organoleptic characteristics of their oils.
